Mourviels is the only wine which succeeds in combining Atlantic type (Merlot-Cabernet) and Mediterranean type (Grenache-Syrah) to create original complex aromas.

Terrain:
Château Mourviels is located on the foothills of the massif-central, close to the Audoise black-mountain and near the famous city of Carcassonne.
The hillside is covered with chalky white stone and marly clay. This exceptional soil encourages the development of a complex and original wine, combining Cabernet sauvignon, Merlot, Syrah and Grenache.
Climate:
Influenced both by the dryness and warmth of the Mediterranean sun, and the freshness of the Atlantic Ocean. This helps in the complete maturation of the grapes.
The wineyard:
occupies a total area of 10 Hectares which allows us to produce only 12,000 bottles a year of this individual, highly prized, quality wine.
A very personal method of vinification:
The vinification takes place in small vessels with manual "pigeage” and without any mechanical intervention whatsoever. As we respect our wine, we use micro-oxygenation in place of "remontages" or "delestage" . The temperature of fermentation is carefully controlled at 23°- 26° in order to develop & preserve the aromas.
Fermentation is five weeks in Vats. The "pressurage" is very soft.
A quarter of the wine is aged six months in French oak barrels, then recombined with the rest which has been ageing in temperature controlled vats. A further 6 months ageing follows.
Technical détails:
Mourviels is the only wine which can associate Atlantic type : merlot - cabernet and Mediterranean type : grenache - syrah, in order to obtain original and complex aromas.
Soil : Chalky, marly clay on a south- south-west hillside.
Vinification : In small vessels, without mechanical intervention after "eraflage", manual "pigeage", micro-oxygénation, no "remontage" or "delestage", temperature controlled fermentation (23°- 26°). Five weeks in vats, soft "pressurage"(press) and partly aged in French oak barrels.
Oeil (Eye) A deep reddish purple colour with hints of garnet, brilliant & transparent.
Nez (Nose) Intense aromas of very ripe conserved forest fruits (morello cherry, strawberry, blackberry, plum) with hints of kirsch. On aeration, these give way to more spicy dashes which are in turn overtaken by vanilla.
Bouche (Taste) Generous attack, full bodied and well rounded. Complex tastes of well ripened conserved fruits with spices, cocoa and woody tones. Tannins are present, but well rounded and not at all aggressive. Full finish
Suggestions
Ideal for serving with meats in sauces, game, even a dark fruit tart, as long as it isn’t so acidic as to cause conflict.
Open the bottle 2 hours in advance without decanting, in order to gently soften the tannins and relax the structure.
Laying down for 5 years is envisageable without the slightest problem. This will allow time to enhance the complexity and relax the structural strength of the win.
General Comments:
A well rounded spicy wine with notes of conserved ripened fruits. No doubts about its origins in a very hot climate.
